Single-Serving Healthy Desserts Can Satisfy Sweet Tooth














Are there times when you just crave a dessert, but do not feel like baking an entire cake or batch of cookies? Or do you just need dessert for one? I’ve got you covered. It is possible to satisfy a dessert craving without baking anything. Single-serve, healthy desserts are a breeze and can be made in less than five minutes. These recipes contain zero refined sugar and zero refined white flour, so you do not have to feel guilty about indulging in these sweet treats. And with these single-serving desserts, you get to eat the entire thing. Chocolate mug cake ¼ cup almond flour 2 tablespoons unsweetened cocoa powder ¼ teaspoon baking powder 2 tablespoons maple syrup or coconut sugar 1 teaspoon coconut oil 1 tablespoon unsweetened almond or coconut milk ½ teaspoon vanilla extract 1 egg pinch of salt Whisk all ingredients together in a microwave-safe mug. Microwave for 1-2 minutes, or until the cake is cooked through. Top with optional sliced strawberries and coconut whipped cream. Coconut whipped cream

1 can of full-fat coconut milk 2 droppers full vanilla liquid stevia, or 1 tablespoon of local honey or pure maple syrup Chill the can of coconut milk in the fridge overnight. When you remove the chilled can, be careful not to shake it, because you want the cream that floats to the top to stay separated from the liquid portion at the bottom. Open the can and scoop out the thickened cream into a bowl. Add your sweetener and use a mixer to whip until the coconut cream resembles whipped cream. Use the coconut whipped cream right away or store in the refrigerator in a sealed container for up to one week. Chocolate mug brownie 2 tablespoons whole wheat flour or a gluten-free flour 2 tablespoons unsweetened cocoa powder ¼ teaspoon baking powder Pinch of salt 1 tablespoon unsweetened almond butter 3 tablespoons unsweetened almond or coconut milk 2 tablespoons full fat plain Greek yogurt 1½ tablespoon pure maple syrup or local honey 1 tablespoon 60 percent dark-chocolate chips or stevia-sweetened chocolate chips

Stir the flour, cocoa, baking powder and salt into a microwave-safe mug. Next, add in the wet ingredients (almond butter, milk, Greek yogurt, and maple syrup). Using a fork, stir ingredients until smooth. Stir in the chocolate chips. Microwave for 60-90 seconds. The cake should be still slightly moist in the center. Overcooking will cause the brownie to be too dry. Healthy cookie for one 4 tablespoons oat flour (place old fashioned oats in blender or food processor and pulse until flour-like consistency) ½ teaspoon baking powder Pinch of salt 1 ½ tablespoons applesauce 2 tablespoons unsweetened almond butter 2 tablespoons unsweetened almond or coconut milk 1 teaspoon coconut sugar ½ teaspoon vanilla extract 1 tablespoon at least 60 percent dark-chocolate chips or stevia-sweetened chocolate chips Stir the flour, baking powder and salt into a microwave safe mug. In a separate bowl, stir the applesauce, almond butter, milk, coconut sugar and vanilla extract. Add the ingredients from the bowl to the dry ingredients. Stir to combine. Stir in the chocolate chips. Microwave for 60-90 seconds and enjoy.

Chocolate banana ice cream 4 frozen bananas, diced ¼ cup cocoa powder 2 tablespoons unsweetened natural almond butter or peanut butter ¼ cup unsweetened almond milk Optional: at least 60 percent dark-chocolate chips or stevia-sweetened chocolate chips to sprinkle on top Place frozen bananas, cocoa powder, almond butter, and milk into your food processor. Pulse until smooth and creamy. You may need to scrape down the sides a couple of times to get all ingredients stirred in. Stir in optional ingredients. You can enjoy right away or freeze for about two hours, so it is solid enough to scoop.
